Ingredients
- 1-3 medium sweet potato Depending on size of air fryer basket and number of people serving or for meal prep
Optional
- pritz avocado oil if even crisper skin desired, spritz with a little spray oil, I like avocado oil

Instructions
- Wash your sweet potatoes well, and dry well.
- Using a fork, poke holes on each side of the sweet potatoes. (This prevents them from bursting out of their skin while being cooked).
- Place sweet potatoes in air fryer basket, making sure they are not touching. Air fry at 390F degrees for 35 minutes, do not preheat the air fryer, this will help crisp the skins.
- Carefully remove them from the air fryer basket and serve with your favorite toppings. See Notes for topping and storage ideas.
Notes
- To freeze cooked sweet potatoes, let them cool completely, wrap whole in foil, then place in freezer bags for up to 6 months; mashed or boiled potatoes can be frozen similarly in airtight containers.
- Store leftovers in airtight containers in the refrigerator for up to one week and reheat before serving.
- For to-go, wrap the potatoes in foil and keep in an insulated bag or cooler with towels to maintain temperature.
- Reheat sliced sweet potatoes in a preheated 350°F air fryer for 3–5 minutes until hot.
- Various topping options include butter and brown sugar, cinnamon and mini marshmallows, chili or stews, compound butters, ricotta with honey and berries, or Greek yogurt with maple syrup and nuts.
