Easy Air Fryer Baked Sweet Potato Recipe

This Easy Air Fryer Baked Sweet Potato recipe cooks whole sweet potatoes with a crisp skin and tender interior in the air fryer. The skin can be spritzed with avocado oil and sprinkled with kosher salt for added crispness and flavor. The method uses fork pokes to prevent bursting during cooking. The result is a caramelized skin with soft, sweet flesh inside, ready to be topped with a variety of flavorful options. This recipe supports meal prep and is convenient for quick sides or snacks.

Description

The recipe calls for washing and drying medium sweet potatoes, then piercing their skin with a fork to avoid bursting. They are placed in an air fryer basket spaced apart and cooked at 390°F for about 35 minutes without preheating. The high heat crisps the skin while steaming and baking the interior, resulting in a tender, sweet flesh with a slightly caramelized crust. Avocado oil spray and kosher salt can be applied before cooking for an even crisper, salted skin.

Cooked sweet potatoes can be served immediately with a wide range of toppings including butter, brown sugar, cinnamon, mini marshmallows, chili, stews, compound or cinnamon honey butter, ricotta with honey and blackberries, or Greek yogurt with maple syrup and nuts. They can be a meal base or side dish.

The recipe notes include tips on storage: wrapped whole sweet potatoes freeze well for up to 6 months, leftovers store in the refrigerator up to one week, and reheat easily in an air fryer. They can also be packed for potlucks or family dinners.

Reheating instructions suggest slicing and air frying at 350°F for a few minutes to restore warmth and texture.

Ingredients

Servings
  • 1-3 medium sweet potato Depending on size of air fryer basket and number of people serving or for meal prep

Optional

  • pritz avocado oil if even crisper skin desired, spritz with a little spray oil, I like avocado oil
  • kosher salt sprinkle on oiled skin if desired
  • topping ideas in notes

Instructions

  1. Wash your sweet potatoes well, and dry well.
  2. Using a fork, poke holes on each side of the sweet potatoes. (This prevents them from bursting out of their skin while being cooked).
  3. Place sweet potatoes in air fryer basket, making sure they are not touching. Air fry at 390F degrees for 35 minutes, do not preheat the air fryer, this will help crisp the skins.
  4. Carefully remove them from the air fryer basket and serve with your favorite toppings. See Notes for topping and storage ideas.

Notes

  • To freeze cooked sweet potatoes, let them cool completely, wrap whole in foil, then place in freezer bags for up to 6 months; mashed or boiled potatoes can be frozen similarly in airtight containers.
  • Store leftovers in airtight containers in the refrigerator for up to one week and reheat before serving.
  • For to-go, wrap the potatoes in foil and keep in an insulated bag or cooler with towels to maintain temperature.
  • Reheat sliced sweet potatoes in a preheated 350°F air fryer for 3–5 minutes until hot.
  • Various topping options include butter and brown sugar, cinnamon and mini marshmallows, chili or stews, compound butters, ricotta with honey and berries, or Greek yogurt with maple syrup and nuts.
