Easy Almond Croissants
Easy Almond Croissants are prepared by slicing day-old croissants, filling them with a smooth almond mixture of butter, sugar, almond flour, egg, and extract, then topping them with more almond filling and sliced almonds before baking. A simple almond-flavored syrup is brushed inside for added moisture. These croissants offer a rich, nutty sweetness with a tender, flaky texture enhanced by the sliced almonds on top.
Ingredients
Simple Syrup:
- 1/4 cup sugar
- 1/4 cup water
- 1/2 teaspoon almond extract
Almond Croissants:
- 6 croissants (day old)
- 1/2 cup (8 Tablespoons) butter softened, salted
- 1/2 cup sugar
- 1 1/4 cups almond flour
- 1 large egg
- 2 teaspoons almond extract
- 1 teaspoon vanilla extract
Topping:
- 1/4 cup almonds sliced
- powdered sugar
Instructions
- Preheat Your Oven to 350 degrees. Make a simple syrup by placing the water and sugar in a microwave-safe bowl. Heat in the microwave for 90 seconds or until the sugar is completely dissolved. Stir in almond extract.
- Prepare the Almond Filling: In a bowl, combine almond flour, softened butter, granulated sugar, egg, almond extract, and vanilla extract. Mix until well combined and smooth.
- Slice the Croissants: Cut each croissant in half horizontally. This will create a pocket for the almond filling. Lightly brush the inside of the croissant with simple syrup.
- Fill the Croissants: Generously spread the almond filling on the bottom half of each croissant. Reserve a small amount of almond filling for the top of the croissants. Place the top half back on, creating a sandwich.
- Top with Sliced Almonds: Spread a small amount of almond filling on the middle top of each croissant. Sprinkle sliced almonds over the top of each croissant, pressing them gently into the almond filling.
- Bake: Place the filled croissants on a parchment paper lined baking sheet and bake in the preheated oven for 12-15 minutes or until the tops are golden brown.
- Sprinkle with Powdered Sugar: Allow the almond croissants to cool slightly before dusting with powdered sugar for an extra touch of sweetness.

- Store croissants in an airtight container at room temperature or freeze in a freezer-safe bag for longer storage.
- Day-old croissants work best for this recipe, but fresh croissants can also be used and toasted if preferred.
