Easy Almond Croissants
Description
This recipe uses slightly stale croissants cut horizontally to create a pocket, brushed with simple syrup flavored with almond extract for moisture and sweetness. The almond filling combines softened butter, granulated sugar, almond flour, an egg, almond extract, and vanilla extract, mixed into a creamy paste. This filling is generously spread inside the croissants and a small amount remains for topping along with sliced almonds.
Baking develops a golden crust while the almonds toast slightly on top, complementing the rich almond filling. The contrast of flaky croissant layers with creamy almond paste makes a satisfying pastry reminiscent of classic almond croissants.
Cookies freeze well and store airtight at room temperature. Using quality butter and day-old croissants enhances texture and flavor. This method revitalizes croissants with an almond twist without making pastry from scratch.
Ingredients
Simple Syrup:
- 1/4 cup sugar
- 1/4 cup water
- 1/2 teaspoon almond extract
Almond Croissants:
- 6 croissants (day old)
- 1/2 cup (8 Tablespoons) butter softened, salted
- 1/2 cup sugar
- 1 1/4 cups almond flour
- 1 large egg
- 2 teaspoons almond extract
- 1 teaspoon vanilla extract
Topping:
- 1/4 cup almonds sliced
- powdered sugar
Instructions
- Preheat Your Oven to 350 degrees. Make a simple syrup by placing the water and sugar in a microwave-safe bowl. Heat in the microwave for 90 seconds or until the sugar is completely dissolved. Stir in almond extract.
- Prepare the Almond Filling: In a bowl, combine almond flour, softened butter, granulated sugar, egg, almond extract, and vanilla extract. Mix until well combined and smooth.
- Slice the Croissants: Cut each croissant in half horizontally. This will create a pocket for the almond filling. Lightly brush the inside of the croissant with simple syrup.
- Fill the Croissants: Generously spread the almond filling on the bottom half of each croissant. Reserve a small amount of almond filling for the top of the croissants. Place the top half back on, creating a sandwich.
- Top with Sliced Almonds: Spread a small amount of almond filling on the middle top of each croissant. Sprinkle sliced almonds over the top of each croissant, pressing them gently into the almond filling.
- Bake: Place the filled croissants on a parchment paper lined baking sheet and bake in the preheated oven for 12-15 minutes or until the tops are golden brown.
- Sprinkle with Powdered Sugar: Allow the almond croissants to cool slightly before dusting with powdered sugar for an extra touch of sweetness.
Notes
- Store croissants in an airtight container at room temperature or freeze in a freezer-safe bag for longer storage.
- Day-old croissants work best for this recipe, but fresh croissants can also be used and toasted if preferred.
- Use good quality butter for a richer almond filling flavor.
- Fine blanched almond flour from the baking aisle ensures a smooth filling texture.
- Nielsen-Massey almond extract is recommended for authentic almond aroma in both syrup and filling.
