Easy Arugula Salad with Lemon Parmesan Dressing

This refreshing arugula salad is the easiest side dish you can make and is a great healthy side to any protein.

Ingredients

For the dressing
  • 3 tbsp olive oil
  • 3 tbsp lemon juice
  • 1 garlic clove minced
  • 2 tbsp grated Parmesan cheese
  • 1 tsp salt
  • ½ tsp black pepper
For the salad
  • 6 cups arugula/rocket
  • 60 g (2oz) Parmesan Cheese shaved

Instructions

  1. Whisk the dressing ingredients together in a serving bowl.
  2. Add the arugula and toss with the dressing.
  3. Add the shaved Parmesan cheese and toss again.
  4. Serve immediately.
