Ingredients
- 6 cups arugula washed & dried
- 1 cup cherry tomatoes
- 1 ounce Parmesan Cheese shaved with a vegetable peeler, see notes
- ¼ cup slivered red onion
- 1 tablespoon pine nuts toasted, or toasted almonds
Lemon Vinaigrette
- ¼ cup vegetable oil
- 1 ½ tablespoon red wine vinegar
- 1 tablespoon fresh lemon juice
- 1 teaspoon Dijon mustard
- ½ teaspoon granulated sugar or to taste
Instructions
- Whisk all dressing ingredients except the oil in a medium bowl.
- Slowly drizzle oil into the mixture while whisking. Season to taste with salt & pepper.
- Place arugula in a large salad bowl and toss with dressing. Add remaining ingredients on top.
- Serve immediately.

Notes
- Parmesan petals can be made by shaving pieces off the block of Parmesan with a vegetable peeler.
- Add spinach in place of some of the arugula to soften the flavor.
- Substitute store bought dressings for homemade. Choose dressings with a sweet tangy flavor like honey mustard or poppy seed.
