Easy Arugula Salad

Fresh, crisp, and totally flavorful, this easy arugula salad is perfect for a light lunch or dinner!

Ingredients

  • 6 cups arugula washed & dried
  • 1 cup cherry tomatoes
  • 1 ounce Parmesan Cheese shaved with a vegetable peeler, see notes
  • ¼ cup slivered red onion
  • 1 tablespoon pine nuts toasted, or toasted almonds
Lemon Vinaigrette
  • ¼ cup vegetable oil
  • 1 ½ tablespoon red wine vinegar
  • 1 tablespoon fresh lemon juice
  • 1 teaspoon Dijon mustard
  • ½ teaspoon granulated sugar or to taste

Instructions

  1. Whisk all dressing ingredients except the oil in a medium bowl.
  2. Slowly drizzle oil into the mixture while whisking. Season to taste with salt & pepper.
  3. Place arugula in a large salad bowl and toss with dressing. Add remaining ingredients on top.
  4. Serve immediately.

Notes

  • Parmesan petals can be made by shaving pieces off the block of Parmesan with a vegetable peeler. 
  • Add spinach in place of some of the arugula to soften the flavor.
  • Substitute store bought dressings for homemade. Choose dressings with a sweet tangy flavor like honey mustard or poppy seed.
