Easy Asparagus Stir-Fry
This Easy Asparagus Stir-Fry uses fresh asparagus cut diagonally, sautéed quickly with garlic and ginger for a vibrant vegetable side. Ingredients
- 1¾ pounds asparagus 2 small bunches
- ½ tablespoon olive oil
- ½ teaspoon garlic minced, fresh
- ½ teaspoon ginger minced, fresh
- ¼ cup orange juice (not from concentrate)
- ¼ teaspoon sesame oil
- ⅛ teaspoon salt
Instructions
- Trim off the woody stalks of the asparagus, and thinly slice the asparagus with a diagonal cut into pieces about 1½ inches long.
- Heat the olive oil in a medium-sized pan on medium heat. Add in the asparagus and cook, stirring frequently, for 4-5 minutes, until they are fork-tender.
- Add in the garlic and ginger and cook 1 minute. Then, add in the orange juice and simmer for 1 minute, or until evaporated.
- Remove from heat and stir in the sesame oil and salt.
- Serve warm.
