Ingredients

  • 6 cherry tomatoes
  • 2 lices sourdough bread
  • 1 avocado roughly diced
  • 2 tablespoon feta cheese crumbled
  • 1 tablespoon basil chopped
  • 1/2 lemon juiced
  • extra virgin olive oil
  • salt/ black pepper

  1. Roasted Tomatoes: In a small baking dish combine cherry tomatoes with a drizzle of olive oil and a pinch of salt and pepper. Place in the oven at 390 degrees F until they begin to lightly char and wrinkle.
  2. Smashed Avocado: In a medium sized mixing bowl add avocado, basil, a squeeze of lemon juice, a drizzle of extra virgin olive oil and good pinch of salt and pepper. Lightly smash with a fork, leaving a few lumps here and there for some texture.
  3. Toast: Divide smashed avocado between 2 slices of toast, then top with crumbled Feta cheese. Add roasted cherry tomatoes on toast, drizzle over some of the tomato juices from the baking dish. Serve and enjoy!
