Ingredients
- 500 g (1lb) mushrooms halved/sliced, depending on size
- 6 trips streaky bacon chopped
- 150 g (5 oz) feta cheese (2 squares/rounds)
- 2 garlic cloves crushed
- 2 tsp olive oil
- 2 tsp fresh thyme
- ½ tsp salt
- ½ tsp pepper
- 2 cups baby spinach
- 500 g (1lb) pasta
- 1 cup pasta water
- 2 tbsp sour cream (optional)
- parmesan to serve
Instructions
- Preheat the oven to 200°C/390°F.
- Place the feta cheese, mushrooms and bacon in a casserole dish.
- Drizzle with olive oil, add the garlic and thyme then season with salt and pepper.
- Place in the oven and bake for 15-20 minutes until the mushrooms and bacon are cooked through and golden.
- Add the spinach and bake for another 5 minutes.
- While the feta is baking, bring a large pot of salted water to the boil. Cook the pasta for 10-12 minutes until cooked to your preference.
- Reserve 1 cup of pasta cooking water and drain.
- Mash the baked feta with a fork and mix to combine with the mushrooms, spinach and bacon.
- Add the pasta, sour cream (if using) and a splash of the pasta water. Mix well, adding more water if necessary.
- Adjust seasoning then serve topped with Parmesan.
