Easy baked feta pasta with bacon and mushrooms

This easy baked feta pasta with bacon, mushrooms and spinach is a delicious dinner recipe, ready in 30 minutes.

Ingredients

  • 500 g (1lb) mushrooms halved/sliced, depending on size
  • 6 trips streaky bacon chopped
  • 150 g (5 oz) feta cheese (2 squares/rounds)
  • 2 garlic cloves crushed
  • 2 tsp olive oil
  • 2 tsp fresh thyme
  • ½ tsp salt
  • ½ tsp pepper
  • 2 cups baby spinach
  • 500 g (1lb) pasta
  • 1 cup pasta water
  • 2 tbsp sour cream (optional)
  • parmesan to serve

Instructions

  1. Preheat the oven to 200°C/390°F.
  2. Place the feta cheese, mushrooms and bacon in a casserole dish.
  3. Drizzle with olive oil, add the garlic and thyme then season with salt and pepper.
  4. Place in the oven and bake for 15-20 minutes until the mushrooms and bacon are cooked through and golden.
  5. Add the spinach and bake for another 5 minutes. 
  6. While the feta is baking, bring a large pot of salted water to the boil. Cook the pasta for 10-12 minutes until cooked to your preference.
  7. Reserve 1 cup of pasta cooking water and drain. 
  8. Mash the baked feta with a fork and mix to combine with the mushrooms, spinach and bacon.
  9. Add the pasta, sour cream (if using) and a splash of the pasta water. Mix well, adding more water if necessary.
  10. Adjust seasoning then serve topped with Parmesan.
