Ingredients
- 2 cups old-fashioned rolled oats make sure they are certified gluten-free if you are avoiding gluten
- 4 teaspoons ground cinnamon
- ⅓ cup light brown sugar lightly packed
- 1 teaspoon baking powder
- ½ teaspoon finely ground salt
- 2 large eggs room temperature
- 1 cup whole milk
- 2 teaspoons vanilla extract
- ¼ cup pure maple syrup
- ¼ cup unsweetened applesauce
- 4-5 pitted dates diced
- 1 cup diced apple about 1 medium sized apple
- ⅓ cup Chopped Pecans
Instructions
- Preheat the oven to 350° F.
- Spray an 8x8 baking dish with non-stick cooking spray and set aside.
- In a large mixing bowl, add the oats, cinnamon, brown sugar, baking powder, and salt.
- Mix well.
- In a medium mixing bowl, whisk the egg, milk, vanilla, maple syrup, and applesauce until well-combined.
- Add the egg mixture to the oatmeal mixture and stir well.
- Fold in the diced apples and dates.
- Pour the oatmeal mixture into prepared pan and sprinkle top with pecans.
- Bake for 40 minutes or until a toothpick inserted in the center comes out clean.
- Serve immediately.
