Easy Baked Shrimp Toast
Easy Baked Shrimp Toast combines chopped shrimp with mayonnaise, melted butter, garlic, and scallions, spread on sliced baguette or ciabatta and baked until golden and crisp. The topping forms a creamy, flavorful layer with a mild garlic and basil finish. This appetizer offers a crunchy texture from the toasted bread paired with the tender shrimp mixture, making it a practical choice for gatherings or a savory snack.
Ingredients
- 6 oz Shrimp I use raw shrimps, peeled and deveined
- 3 tablespoons mayonnaise
- 3 tablespoons butter melted
- 1 1/2 teaspoons garlic grated
- 1 1/2 tablespoons scallions about 2 stalks of scallions, thinly sliced
- black pepper
- baguette see notes, or ciabatta
- basil thinly sliced
Instructions
- Preheat oven to 400F.
- Chop shrimps or process in a food chopper into small pieces. Don't process into a paste. Mix shrimp with mayonnaise, melted butter, grated garlic, scallions and a generous amount of black pepper.
- Slice ciabatta or baguette in half horizontally, or cut baguette into thin slices. Each slice/half should not be thicker than 1 inch.
- Spread the shrimp mixture on the cut side of the bread. Place into the oven and bake for 15-18 minutes or until the top is golden and bread is crispy.
- Remove bread from the oven. Sprinkle fresh basil and serve immediately.
Notes
- The shrimp mixture quantity covers about half a 6"x8" ciabatta loaf or 10-15 baguette slices depending on thickness.
- Cheese is generally not combined with shrimp here, but parmesan or mozzarella can be used on top and broiled if you like melted cheese toppings.
- Try adding seasonings such as Old Bay, cayenne, or onion powder to the shrimp mixture to suit your taste.
- Season with salt and pepper as needed when mixing shrimp ingredients.
