Easy Baked Shrimp Toast
Description
Easy Baked Shrimp Toast features a mixture of raw peeled and deveined shrimp finely chopped with mayonnaise, melted butter, grated garlic, and thinly sliced scallions. The shrimp topping is seasoned with black pepper and generously spread over thinly sliced baguette or halved ciabatta bread. Baking in a 400°F oven for 15 to 18 minutes crisps the bread and cooks the shrimp topping until golden. Fresh basil sprinkled on top adds a subtle herbal note and a touch of color.
The shrimp mixture maintains a chunky texture, providing a pleasant contrast to the crisp toasted bread base. The melted butter and mayonnaise contribute richness, while garlic and scallions offer savory brightness. Black pepper adds a mild heat that melds with the seafood and bread.
This recipe is designed as a finger food or appetizer. The amount of shrimp mixture is sufficient to cover half a 6-inch by 8-inch ciabatta loaf or about 10 to 15 baguette slices. It’s suitable for serving at parties or casual meals when you want a seafood-based snack that is easy to prepare.
The notes suggest avoiding cheese as a topping due to personal preference, but recommend experimenting with parmesan or mozzarella if desired. Additional seasoning like Old Bay or cayenne can be added for extra flavor. Adjust the portion size of shrimp mixture according to bread thickness and slices.
Ingredients
- 6 oz Shrimp I use raw shrimps, peeled and deveined
- 3 tablespoons mayonnaise
- 3 tablespoons butter melted
- 1 1/2 teaspoons garlic grated
- 1 1/2 tablespoons scallions about 2 stalks of scallions, thinly sliced
- black pepper
- baguette see notes, or ciabatta
- basil thinly sliced
Instructions
- Preheat oven to 400F.
- Chop shrimps or process in a food chopper into small pieces. Don't process into a paste. Mix shrimp with mayonnaise, melted butter, grated garlic, scallions and a generous amount of black pepper.
- Slice ciabatta or baguette in half horizontally, or cut baguette into thin slices. Each slice/half should not be thicker than 1 inch.
- Spread the shrimp mixture on the cut side of the bread. Place into the oven and bake for 15-18 minutes or until the top is golden and bread is crispy.
- Remove bread from the oven. Sprinkle fresh basil and serve immediately.
Notes
- The shrimp mixture quantity covers about half a 6"x8" ciabatta loaf or 10-15 baguette slices depending on thickness.
- Cheese is generally not combined with shrimp here, but parmesan or mozzarella can be used on top and broiled if you like melted cheese toppings.
- Try adding seasonings such as Old Bay, cayenne, or onion powder to the shrimp mixture to suit your taste.
- Season with salt and pepper as needed when mixing shrimp ingredients.
