Ingredients

  • 2 Tablespoons olive oil (divided)
  • 3 chicken breast diced into bite size pieces
  • 1 green pepper (sliced)
  • 1/2 red onion (sliced)
  • 2 celery diced, stalks
  • 2 teaspoons garlic minced
  • 1 Tablespoon sesame seeds
For the Sauce:
  • 1/2 cup soy sauce
  • 2 Tablespoon cornstarch
  • 2 Tablespoon oyster sauce
  • 2 Tablespoon rice wine vinegar
  • 2 teaspoon black pepper
  • 1/2 teaspoon ground ginger

Instructions

  1. Heat 1 tablespoon of oil in a large skillet over medium high heat. Add the chicken and cook for 4-5 minutes until the chicken is browned and cooked through.
  2. Move the chicken to a separate plate.
  3. Add the remaining oil to the pan with the bell peppers, onion, celery and garlic. Cook these ingredients for 5-6 minutes until slightly soft.
  4. I a separate small bowl, combine the sauce ingredients.
  5. Stir the chicken and sauce back into the skillet. Stir to combine all ingredients with the sauce.
  6. Cook over medium high heat for 1-2 minutes until the sauce has thickened.
  7. Remove from heat and top with the sesame seeds. Then it's ready to serve and enjoy!

Notes

  • Store leftovers in an airtight container in the fridge for up to five days to maintain freshness.
  • Serve the chicken and vegetable mix over rice to absorb the flavorful sauce and make a complete meal.
