Easy Blender Pancakes
Easy Blender Pancakes are made by blending oats, banana, eggs, almond milk, and baking powder into a smooth batter, resulting in fluffy pancakes with mild sweetness and a hint of cinnamon. The process simplifies pancake prep and produces tender, evenly cooked pancakes perfect for a nutritious breakfast.
Ingredients
- 2 cups old fashioned oats (can use gluten-free oats)
- 1 cup almond milk or milk of your choice, unsweetened vanilla
- 1 banana medium, ripe
- 1 egg large
- 1 egg white
- 2 tablespoons pure maple syrup
- 1 1/2 teaspoons vanilla extract pure
- 2 1/2 teaspoons baking powder
- 1/2 teaspoon ground cinnamon
- 1/2 teaspoon salt
Instructions
- Place the oats, milk, banana, egg, egg white, maple syrup, vanilla extract, baking powder, cinnamon, and salt in a blender. Blend until smooth, about 30 to 60 seconds.
- Heat a griddle or large skillet over medium-high heat. Grease with nonstick cooking spray.
- Pour about 1/3 cup of the pancake batter onto the hot griddle or skillet. Cook until small bubbles form all across the top of the pancakes, about 3 minutes, then flip and continue to cook until golden brown. Repeat with remaining batter.
- Serve pancakes warm with maple syrup, nut butter, or fresh fruit, if desired.
Notes
- Keep cooked pancakes warm by placing them in a single layer on a baking sheet in a 200°F oven while finishing the rest of the batch.
