Easy Blueberry Compote

Ingredients
- 2 cups (300g) blueberries fresh or frozen
- 2 tablespoon sugar
- 1 tablespoon lemon juice
- 1 tablespoon water
Instructions
- Add the blueberries, sugar, lemon juice and water to a pot, stir and bring to the boil. Allow it to boil for about 5 minutes, stirring often to stop it from scorching.
- Reduce the heat to low and let it simmer and thicken for 10 minutes. It will thicken further as it cools. If necessary, stir 1 teaspoon cornstarch into 1tsp water, add it to the blueberry compote and cook for a further minute.
- Serve warm or allow to cool and store in a sterilised jar in the fridge for up to 5 days (or freeze for up to 2 months).

Notes
- There are many ways to use a tasty blueberry compote. Try with ice cream, yogurt, oatmeal, pancakes, toast, French toast, cake filling, cheesecake...
- How to thicken compote: Fruit can have different moisture levels. If your compote isn’t thickening (keep in mind that it will thicken further as it cools), add 1 tablespoon cornstarch stirred into 1 tablespoon water (called a 'slurry'), stir it in and simmer for a few minutes.
- Serve this compote warm or cold.
- Storage: Keep in the fridge for up to 5 days or freeze for up to 2 months.
