Ingredients

GRANOLA YOGURT BOWLS
  • 2 cups yogurt plain, Greek
  • 1 cup maple pecan granola or your favorite granola
  • 1 cup blueberries fresh
  • 1-2 TBSP blueberry syrup for drizzling
BLUEBERRY SYRUP
  • ½ cup blueberries , fresh or frozen
  • ½ cup water
  • ½ cup granulated sugar
  • ½ tsp lemon juice

Instructions

BLUEBERRY SYRUP

  1. To make the blueberry syrup, combine blueberries, water, and sugar together in a small saucepan over low heat, whisking occasionally until sugar is dissolved, approx. 5 minutes.
  2. Increase heat to medium and bring a gentle boil, stirring often, until syrup is thickened, about 15 minutes.
  3. Mash berries well with a fork and strain through a sieve/strainer for a thick, smooth syrup. For a compote, feel free to leave the mixture chunky! After syrup has cooled, stir in lemon juice and seal/store in an airtight container in the fridge.
YOGURT BOWLS
  1. Divide yogurt between two small bowls.
  2. Top each bowl with 1/2 cup granola and 1/2 cup fresh blueberries.
  3. Add a drizzle of blueberry syrup and dive in!
