Easy Blueberry Oatmeal Bars Recipe

Blueberry oatmeal bars combine the chewy goodness of oats and the fruity sweetness of blueberries turning this snack into the pefrect treat.

Ingredients

Blueberry Sauce
  • 3 cups fresh blueberries divided
  • 2 tablespoons or granulated sugar or a sugar free alternative like Swerve
  • 1/2 cup water plus 1 tablespoon
  • 1 Tablespoon cornstarch
Oatmeal Bars
  • 1 cup all-purpose flour
  • 1 cup old-fashioned oatmeal
  • 1 teaspoon baking powder
  • 1/4 teaspoon cinnamon
  • 1/4 teaspoon salt
  • 1 large egg
  • 1/4 cup maple syrup
  • 1/4 cup unsalted butter melted and cooled
  • 2 teaspoon vanilla extract divided

Instructions

Blueberry Sauce Filling

  1. In a small saucepan add 2 cups of blueberries, water, sweetener. Bring ingredients to a boil, then reduce heat to medium-low. Cook until the blueberries begin to soften.
  2. In a small bowl whisk together the cornstarch with 1 tablespoon of water. Add to the blueberry sauce and cook until the sauce thickens.
  3. Remove the saucepan from the heat and add 1 teaspoon of vanilla extract. Set blueberry sauce aside to cool.
Oatmeal Bars Base and Topping
  1. Pre-heat the oven to 350°F and line a 8" x 8" baking pan with parchment paper.
  2. In a medium size mixing bowl whisk together the flour, oats, baking powder, cinnamon and salt.
  3. In a separate large bowl add the egg, maple syrup, butter, and vanilla together. Mix until well blended.
  4. Combine the wet and dry ingredients together forming a dough. Remove 1/2 cup of the dough for the topping.
  5. Place the remaining dough on the bottom of the prepared baking pan, and with your hands press the dough evenly on the surface forming a solid crust.
  6. Top the dough with 1 cup of the prepared blueberry sauce, then top the sauce with 1 cup of fresh blueberries.
  7. Crumble the remaining dough over the blueberries and bake for 30 minutes or until the top is lightly browned.
  8. Cool and slice into 12 squares.

Notes

  • Lemon Blueberry Bars: You can add some lemon zest or a small amount of lemon juice to the blueberry filling to add some citrus. 
  • Strawberry Oatmeal Bars: If you prefer strawberry instead of blueberry, swap out the blueberries in this recipe for sliced strawberries. 
  • Sweeteners: The good news about this recipe is that it is pretty flexible and you can use the sweetener of your choice, coconut sugar, sugar-free options, or even light brown sugar for a hint of molasses taste. 
  • Chia Seeds: Fold in a couple of tables of chia seeds to the crust mixture if you want to add a little more protein and fiber to the crust. 
  • In a rush? Use pre-made blueberry jam as your filling.
