Instructions
Blueberry Sauce Filling
- In a small saucepan add 2 cups of blueberries, water, sweetener. Bring ingredients to a boil, then reduce heat to medium-low. Cook until the blueberries begin to soften.
- In a small bowl whisk together the cornstarch with 1 tablespoon of water. Add to the blueberry sauce and cook until the sauce thickens.
- Remove the saucepan from the heat and add 1 teaspoon of vanilla extract. Set blueberry sauce aside to cool.
Oatmeal Bars Base and Topping
- Pre-heat the oven to 350°F and line a 8" x 8" baking pan with parchment paper.
- In a medium size mixing bowl whisk together the flour, oats, baking powder, cinnamon and salt.
- In a separate large bowl add the egg, maple syrup, butter, and vanilla together. Mix until well blended.
- Combine the wet and dry ingredients together forming a dough. Remove 1/2 cup of the dough for the topping.
- Place the remaining dough on the bottom of the prepared baking pan, and with your hands press the dough evenly on the surface forming a solid crust.
- Top the dough with 1 cup of the prepared blueberry sauce, then top the sauce with 1 cup of fresh blueberries.
- Crumble the remaining dough over the blueberries and bake for 30 minutes or until the top is lightly browned.
- Cool and slice into 12 squares.
Notes
- Lemon Blueberry Bars: You can add some lemon zest or a small amount of lemon juice to the blueberry filling to add some citrus.
- Strawberry Oatmeal Bars: If you prefer strawberry instead of blueberry, swap out the blueberries in this recipe for sliced strawberries.
- Sweeteners: The good news about this recipe is that it is pretty flexible and you can use the sweetener of your choice, coconut sugar, sugar-free options, or even light brown sugar for a hint of molasses taste.
- Chia Seeds: Fold in a couple of tables of chia seeds to the crust mixture if you want to add a little more protein and fiber to the crust.
- In a rush? Use pre-made blueberry jam as your filling.
