EASY BROCCOLI CHEESE CASSEROLE

Ingredients

  • 4 cups fresh broccoli florets (or frozen, thawed and drained)
  • 1 can (10.5 oz) condensed cream of mushroom soup
  • 1 cup mayonnaise
  • 1 cup shredded cheddar cheese
  • ½ cup milk
  • 2 large eggs, beaten
  • ½ teaspoon garlic powder
  • ½ teaspoon onion powder
  • salt and pepper to taste
  • 1 cup crushed Ritz crackers or breadcrumbs (for topping)
  • 2 tablespoons melted butter (for topping)

  1. Preheat the oven to 350°F (175°C). Grease a 9x13-inch baking dish.
  2. In a large mixing bowl, combine the condensed cream of mushroom soup, mayonnaise, shredded cheddar cheese, milk, beaten eggs, garlic powder, onion powder, salt, and pepper. Mix until well combined.
  3. Add the broccoli florets to the bowl and toss to coat them evenly with the cheese mixture.
  4. Pour the broccoli and cheese mixture into the prepared baking dish and spread it out evenly.
  5. In a small bowl, mix the crushed Ritz crackers or breadcrumbs with the melted butter. Sprinkle the mixture evenly over the top of the casserole.
  6. Bake in the preheated oven for 25-30 minutes, or until the casserole is bubbly and the top is golden brown.
  7. Remove from the oven and let cool slightly before serving.
