Easy Broiled Flank Steak Recipe

Tender flank steak marinaded in a simple mix of spices and diced tomatoes. Broil and slice for your main dish.

Ingredients

  • 2 pounds flank steak or skirt steak
  • 1/4 cup olive oil
  • 2 teaspoons cumin
  • 1/2 teaspoon salt
  • 2 limes juiced
  • 1 10 ounce can RO*TEL diced tomatoes
  • 1 bunch fresh Cilantro divided

Instructions

  1. Steak Marinade
  2. In a small mixing bowl whisk together olive oil, cumin, salt and juice of two limes.
  3. Place marinade in a plastic bag with the steak. Close bag and massage marinade all over the meat.
  4. Add diced tomatoes and 1/2 cup chopped cilantro and coat the meat again.
  5. Put in the refrigerator to marinade for at least 2 hours and up to 1 day.
  6. Flank Steak
  7. Line a baking sheet with aluminum foil and set aside.
  8. To cook steak remove from the refrigerator and let sit for thirty minutes at room temperature.
  9. Place steak on prepared baking sheet and place six inches below the broiler and broil for 2 minutes. Flip and broil the other side for 3 minutes.
  10. Remove steak from heat and place on a cutting board. Cover lightly with foil and let sit for for 5 minutes. Slice against the grain.

Notes

  • Depending on the thickness of the steak you may want to broil longer than noted. For well done steak you will want to broil for 8-10 minutes.
