Easy Brownie Recipe With Mascarpone Swirl
These chewy Brownies with Mascarpone Cheese are wonderfully ooey gooey, chocolatey, and a little crispy on the outside while being moist and fluffy inside.

Ingredients
- 7 oz dark chocolate or chocolate chips preferably 60–70% cocoa
- 7 oz unsalted butter cubed
- 5 oz cane sugar
- ¾ cup flour
- 2 eggs
- ½ teaspoon baking powder
For Mascarpone swirl
- 8 oz mascarpone cheese
- 1 egg
- ½ teaspoon vanilla extract
- ¼ cup cane sugar
Instructions
- Preheat the oven to 355 F and line a 9-inch square baking pan with parchment paper.
- Combine the chocolate and butter in a medium heatproof bowl and set the bowl over a pot of a simmering water. The bowl should not be touching the bottom on a pot. Stir from time to time until the mixture is melted. Remove from the heat and let the mixture cool slightly.
- Whisk in the sugar, followed by the eggs (make sure the mixture has cooled for a few minutes so you don’t scramble them). Then add the flour and baking powder and mix until just combined.
- Pour ¾ of the brownie batter into prepared pan and spread evenly.
- In a separete medium bowl, whisk the mascarpone, egg, vanilla extract and sugar until smooth.
- Dollop the mascarpone mixture over the brownie base then spoon the remaining brownie batter on top. Use a fork or knife to gently swirl the two mixtures together—don’t overmix.
- Bake for 30 minutes or until the center is set and a toothpick comes out with moist crumbs (not wet batter). Remove from the oven.
- Let the brownies cool before slicing into squares.

Notes
- Chocolate: You can use any type of chocolate for this recipe. You can use dark, semi-sweet, or even milk chocolate, depending on your preference. If you're using a chocolate bar, make sure to chop it into small, even pieces so it melts easily.
- Storage: These brownies can be kept at room temperature for up to 2 days. If you want them to last longer, you can store them in the refrigerator for up to a week. Just make sure to keep them in an airtight container.
