These chewy Brownies with Mascarpone Cheese are wonderfully ooey gooey, chocolatey, and a little crispy on the outside while being moist and fluffy inside.

Ingredients

  • 7 oz dark chocolate or chocolate chips preferably 60–70% cocoa
  • 7 oz unsalted butter cubed
  • 5 oz cane sugar
  • ¾ cup flour
  • 2 eggs
  • ½ teaspoon baking powder

For Mascarpone swirl

  • 8 oz mascarpone cheese
  • 1 egg
  • ½ teaspoon vanilla extract
  • ¼ cup cane sugar

Instructions

  1. Preheat the oven to 355 F and line a 9-inch square baking pan with parchment paper.
  2. Combine the chocolate and butter in a medium heatproof bowl and set the bowl over a pot of a simmering water. The bowl should not be touching the bottom on a pot. Stir from time to time until the mixture is melted. Remove from the heat and let the mixture cool slightly.
  3. Whisk in the sugar, followed by the eggs (make sure the mixture has cooled for a few minutes so you don’t scramble them). Then add the flour and baking powder and mix until just combined.
  4. Pour ¾ of the brownie batter into prepared pan and spread evenly.
  5. In a separete medium bowl, whisk the mascarpone, egg, vanilla extract and sugar until smooth.
  6. Dollop the mascarpone mixture over the brownie base then spoon the remaining brownie batter on top. Use a fork or knife to gently swirl the two mixtures together—don’t overmix.
  7. Bake for 30 minutes or until the center is set and a toothpick comes out with moist crumbs (not wet batter). Remove from the oven.
  8. Let the brownies cool before slicing into squares.
  9. Enjoy!

Notes

  • Chocolate: You can use any type of chocolate for this recipe. You can use dark, semi-sweet, or even milk chocolate, depending on your preference. If you're using a chocolate bar, make sure to chop it into small, even pieces so it melts easily.
  • Storage: These brownies can be kept at room temperature for up to 2 days. If you want them to last longer, you can store them in the refrigerator for up to a week. Just make sure to keep them in an airtight container.
