Easy Buffalo Chicken Mac and Cheese

Ingredients
- ½ cup salted butter
- 1/3 cup all-purpose flour
- 1 ¾ cup whole milk
- 1/2 teaspoon salt
- 1/2 teaspoon black pepper
- 1/2 teaspoon garlic powder
- 1/2 teaspoon onion powder
- 4 ounces cream cheese
- 1 cups mild cheddar cheese shredded
- 1 1/2 cup mozzarella cheese shredded
- 1 pound macaroni noodles
- 1/2 cup buffalo sauce
- 1 1/2 cups shredded chicken

Instructions
- Preheat the oven to 350 degrees F and spray a 9X13 baking dish with non-stick cooking spray.
- Cook the pasta to al dente based on the package instructions.
- Melt the butter in a large pot over medium high heat. Whisk in the flour and cook for 2 minutes to create a roux.
- Slowly whisk in the milk and the seasonings. Heat and bring the mixture to a low boil.
- Heat for a few minutes until the mixture thickens.
- Remove from heat and immediately stir in the cream cheese and shredded cheeses. Stir until the cheese is melted and smooth.
- Stir in the buffalo sauce.
- Stir in the shredded chicken and pasta until well coated.
- Pour into the prepared pan and bake for 15 minutes until heated through and bubbly.
- Serve with your favorite toppings and enjoy!
Notes
- Refrigerate the leftovers in an airtight container for up to 5 days.
- Make sure to use freshly grated cheese to ensure that it melts smoothly and evenly.
- Not all buffalo sauce is the same, choose one based on the spice level that you prefer.
