Ingredients
- 1 lb farro prepared according to package directions and drained well
- 4 tablespoons olive oil divided
- 1 large shallot diced finely
- 4-6 cloves garlic minced
- 2 teaspoons Italian Herbs
- 8 oz cherry tomatoes sliced in half
- 1 cucumber cut into 1" bites
- 6 leaves fresh basil chopped
- 1-2 balls fresh burrata
Instructions
- Prepare farro according to package directions. Drain well and place in a large bowl for serving.
- In a small pan, heat 2 tbsp olive oil until shimmery on medium.
- Stir in shallots and garlic and cook until softened and very lightly browned, about 2-3 minutes.
- Stir shallots and onions into farro.
- Add tomatoes, cucumber, basil, Italian herbs to farro and toss to evenly mix.
- Chill in refrigerator 1 hour. (Optional - we like the flavor after it has had a chance to chill and settle, but this is up to you.)
- Top with burrata, and break the cheese open as you serve.
- Enjoy!

- If you don't like burrata, or don't have any on hand, you can omit it or swap with 1 cup crumbled feta cheese.
