Easy buttermilk scones

These easy buttermilk scones use chilled butter rubbed into flour with baking powder and sugar to create a tender, crumbly texture. The dough is combined with buttermilk and egg then cut into rounds before baking to golden brown. The result is flaky scones with a soft interior and a lightly crisp exterior, fit for breakfast or teatime.

Description

Easy buttermilk scones are made by mixing dry ingredients including flour, baking powder, salt, and sugar. Cold butter is rubbed into the flour mixture until it resembles bread crumbs, which creates the base for a tender, flaky scone. The wet ingredients include buttermilk and a beaten egg, which are added and gently mixed into a dough.

The dough is shaped into a thick disc on a floured surface and then cut into rounds with a cutter. Brushing the tops with heavy cream before baking encourages even browning and a slightly crisp crust. The scones are baked at 180°C (350°F) for about 15-20 minutes until golden and cooked through.

These scones have a soft crumb with a subtle buttery flavor, making them a nice accompaniment to breakfast spreads, preserves, or tea. They can be served warm or cooled and are convenient for casual baking on hand.

Ingredients

Servings
  • 2 cups (260g) flour
  • 3 tsp (15g) baking powder
  • 1 tsp (5g) salt
  • 2 tbsp (30g) caster sugar
  • 3 tbsp (45g) butter (The butter should be chilled but not so hard that you can't rub it into the flour)
  • ¾ cup (185ml) buttermilk
  • 1 large egg
  • 2-3 tbsp heavy cream aka whipping cream

Instructions

  1. Pre-heat the oven to 180ºC/350ºF and line a baking sheet with baking/parchment paper.
  2. Combine all the dry ingredients in a mixing bowl. Rub the butter into the flour until the mixture resembles bread crumbs/almond flour.
  3. Whisk the egg into the buttermilk and pour into the dry ingredients. Mix with a fork until the mixture just comes together then tip out onto a floured surface.
  4. Lightly bring the dough together into a disc approximately 3-5cm/1-2 inches high. Using a round cutter, cut scones out of the dough and place onto the prepared baking sheet. Press the dough together and continue cutting until all the dough has been used.
  5. Brush the top of the scones with heavy/whipping cream and place in the oven to bake for 15-20 mins until golden brown and cooked through.
  6. Remove from the oven and allow to cool for 10 minutes before serving.
