Ingredients

  • 1 ½ lb Shrimp peeled and deveined
  • 2 tablespoons Cajun Seasoning
  • 1 tablespoon olive oil
  • ½ teaspoon sea salt
  • A pinch of chili flakes
  • 2 medium green bell peppers diced small
  • 2 small shallots minced
  • 2 tablespoons tomato paste
  • ½ cup chicken or vegetable stock
  • sea salt and pepper to taste

Instructions

    Cup of Yum
  1. Place the shrimp in a bowl and toss with the Cajun seasoning, olive oil, salt, and chili flakes. Set aside to marinate while you prep the veggies.
  2. Heat a large skillet over medium-high heat. Add the shrimp and sear for 2 minutes. Add the peppers and shallots to the pan then cook for 2 more minutes.
  3. Lower the heat to medium and push the shrimp and veggies to the side of the pan. Add the tomato paste and let it caramelize for 2-3 minutes, or until it darkens and smells sweet.
  4. Add the stock to the pan and stir everything together, scraping the bottom to remove any stuck-on flavorful bits. Season to taste with salt and pepper.

Notes

  • Serving: If you'd like to serve this with rice, put on a pot before you start making the shrimp. This recipe also goes well with low-carb cauliflower rice.
  • Shrimp: While you can make this with any size of shrimp you like, I prefer medium-sized (30/40 count) shrimp.

  • Cajun seasoning: If the Cajun seasoning you have in your pantry is really spicy, you may want to reduce the amount.
