Easy California Chicken Salad

Creamy California Chicken Salad features tender chicken, juicy grapes, crisp celery, and pecans in a tangy Greek yogurt dressing. Perfect in croissants!

Ingredients

  • 1 lb seasoned shredded chicken
  • 1 cup washed and sliced grapes
  • 2 stalks celery
  • 1 green onion
  • ½ cup pecans
  • ½ cup chopped red onion
The Dressing
  • 5.3 oz container or ½ cup plain greek yogurt
  • 2 teaspoons Dijon mustard
  • 1 tablespoons maple syrup
  • 1 teaspoon apple cider vinegar
  • ½ teaspoon onion powder
  • 1 teaspoon poppyseeds
  • salt and pepper to taste

Instructions

  1. In a small bowl combine all the ingredients to make the dressing. Stir well until fully combined.
  2. Place the chicken, grapes, celery, onion, pecans, and red onion into a medium bowl.
  3. Add the poppyseed dressing to the chicken mixture. Stir until well combined. Serve immediately or refrigerate for later.

Notes

  • Storage: Keep in the refrigerator for up to 3-5 days. Don't freeze. 
  • Serve with whole grain bread, between two halves of a croissant, on your favorite crackers, or alone.
