													Creamy California Chicken Salad features tender chicken, juicy grapes, crisp celery, and pecans in a tangy Greek yogurt dressing. Perfect in croissants!

                                Ingredients
- 1 lb seasoned shredded chicken
 - 1 cup washed and sliced grapes
 - 2 stalks celery
 - 1 green onion
 - ½ cup pecans
 - ½ cup chopped red onion
 
The Dressing
- 5.3 oz container or ½ cup plain greek yogurt
 - 2 teaspoons Dijon mustard
 - 1 tablespoons maple syrup
 - 1 teaspoon apple cider vinegar
 - ½ teaspoon onion powder
 - 1 teaspoon poppyseeds
 - salt and pepper to taste
 
Instructions
- In a small bowl combine all the ingredients to make the dressing. Stir well until fully combined.
 - Place the chicken, grapes, celery, onion, pecans, and red onion into a medium bowl.
 - Add the poppyseed dressing to the chicken mixture. Stir until well combined. Serve immediately or refrigerate for later.
 
Notes
- Storage: Keep in the refrigerator for up to 3-5 days. Don't freeze.
 - Serve with whole grain bread, between two halves of a croissant, on your favorite crackers, or alone.
