Easy Caprese Frittata

Ingredients

  • 8 whole eggs
  • ⅔ cup cherry tomatoes halved
  • ½ cup fresh mozzarella bocconcini, cut
  • ⅓ cup heavy cream
  • ⅓ cup Parmesan Cheese grated
  • 1 ounce fresh baby spinach
  • 1 tablespoon fresh basil chopped
  • 1 tablespoon olive oil
  • 2 cloves garlic minced
  • 1 teaspoon salt
  • ¼ teaspoon ground black pepper

Instructions

  1. Preheat oven to 400°F.
  2. In a large mixing bowl, add in the eggs, heavy cream, parmesan cheese, salt and pepper, and mixing using a hand mixer or whisk for a few minutes until frothy.
  3. Heat a 10” oven-safe skillet to medium, add in the olive oil and garlic and sauté for about 20 seconds or until the spinach has wilted, but the garlic has not browned.
  4. Pour in the egg mixture, tomatoes, basil and mozzarella cheese.
  5. Cook for 4-5 minutes, then turn off the heat and place the skillet in your preheated oven, then bake for 10-12 minutes or until the eggs have set and are cooked through.
  6. Allow to cool slightly before slicing into wedges and serving.
