Ingredients

  • 1 Tablespoon neutral cooking oil generic cooking oil
  • 1 shallot chopped, large
  • 2 celery chopped, stalks
  • 2 cloves garlic minced
  • 1 red pepper chopped
  • 1 cup carrot chopped, about 4 medium/large carrots
  • 14 ounce diced tomatoes with chilies
  • 1 ½ cups brown lentils
  • 4 cups broth
  • 1-2 cups water
  • 2 cups ham about 10 ounces, cubes

Instructions

    Cup of Yum
  1. Heat oil, then sautee shallots and celery until just tender. Add garlic and cook for another minute.
  2. Add remaining ingredients, bring to a simmer, and cook, covered, until tender, about a half hour.

Notes

  • For a creamiier soup, you can puree a cup or so of the cooked lentils.
