Easy Carrot Noodles (No Spiralizer Required!)
Easy Carrot Noodles are made by peeling large carrots into thin ribbons and quickly sautéing them in a sesame oil glaze flavored with hoisin, soy sauce, orange juice, and fresh ginger. The dish offers tender yet slightly crisp vegetable noodles with a savory-sweet Asian-inspired sauce, ideal as a side or light main.
Ingredients
- 2 Tbsp hoisin sauce 30 mL
- 2 Tbsp orange juice 30 mL
- 1 Tbsp soy sauce 15 mL, low sodium
- 1 Tbsp ginger fresh grated
- 6 large carrot trimmed
- 1 Tbsp sesame oil
- 1 Tbsp sesame seeds
Instructions
- Glaze: In a small bowl, mix hoisin, soy, orange juice, and ginger.
- Noodle-fy: Use a vegetable peeler to peel down the length of the carrot, creating long ribbons.
- Cook: Heat sesame oil in a large saute pan or a wok over medium heat. Add carrot noodles and cook for about 3 minutes, gently stirring often. Add in the sauce mixture and continue to cook another 1 minute, stirring to blend everything. Sprinkle with sesame seeds and serve hot!
Notes
- Carrots can be used unpeeled after thorough washing for extra texture and nutrients.
- Store cooked carrot noodles in the fridge and reheat gently in a pan or microwave.
