Easy Cheeseburger Soup

Cheeseburger Soup. This thick and hearty soup comes together in 30 minutes. Made with tender ground beef, potatoes, and vegetables all in a cheesy and creamy broth.

Ingredients

  • 1 lb ground beef
  • 2 tbsp butter
  • ½ cup onion diced
  • 1 stalk celery chopped (approx 3/4 cup)
  • 1 large carrot peeled, chopped (approx 3/4 cup)
  • 2 cloves garlic minced
  • 1 tsp Worcestershire sauce 
  • ¼ cup all purpose flour
  • 3 cups (1½ lbs) potatoes yellow or gold, chopped
  • 3 cups beef broth
  • 1 tsp salt
  • ½ tsp ground black pepper
  • ½ tsp dried parsley
  • ¼ tsp crushed red pepper
  • 1 cup milk
  • 1 cup cheddar cheese shredded

  1. Add ground beef to a large dutch oven or stock pot. Cook over medium heat, breaking up the beef as it cooks. Cook until all beef is browned and no longer pink. 
  2. Pour the beef into a strainer, to drain out the excess grease and set the meat aside. 
  3. Return the empty pot to the stovetop and melt the butter over medium heat. 
  4. Add the onion, celery, and carrots. Stir in the Worcestershire sauce. Cook while stirring often until the vegetables are softened. Add in the garlic and cook an additional 30 seconds. 
  5. Stir the flour into the pot to coat the vegetables. Cook for 2-3 minutes while stirring. 
  6. Pour in the beef broth, stir and scrape the bottom of the pan with a wooden spoon to loosen any bits that may have stuck during cooking.
  7. Add in the salt, pepper, dried parsley, crushed red pepper, diced potatoes, and cooked ground beef. 
  8. Bring soup to a simmer, turn heat to low to keep at a low simmer, cover the pot and let cook for 15-20 minutes until potatoes are softened. 
  9. Once potatoes are cooked, remove the pot from heat, stir in the milk, then add the cheese and stir while the cheese melts. 
  10. Serve while warm with optional toppings!
