Easy Chicken Cordon Bleu

Easy preparation and simple ingredients makes this Easy Chicken Cordon Bleu a fabulous mid-week dinner. It's fancy enough for company, easy enough for every day!

Ingredients

  • 4 tablespoons butter
  • ½ teaspoon dried thyme
  • ½ teaspoon salt
  • ½ teaspoon cracked pepper
  • ½ teaspoon garlic powder
  • 2 large chicken breasts
  • 1 ounces Swiss cheese sliced
  • 4 slices deli ham
  • 1 ½ cups panko breadcrumbs
OPTIONAL - Creamy Dijon Sauce
  • 1 tablespoon Dijon mustard
  • 1 cup heavy cream
  • 1/4 cup grated Parmesan cheese
  • salt
  • Black pepper to taste
  • 1/2 teaspoon garlic powder or onion powder, optional
  • 1 tablespoon unsalted butter optional, for richer flavor

Instructions

Get prepped
    Cup of Yum
  1. Pre heat the oven to 350°F.
  2. Melt the butter in a large bowl.
  3. Mix together the thyme, salt, pepper, and garlic powder.
  4. Using a kitchen mallet, pound the chicken breasts evenly until they’re about half an inch thick.
  5. Season chicken on both sides with the mixed seasonings.
Assemble
  1. Place a slice of ham on each chicken breast, then a slice of swiss cheese, and top with another slice of ham.
Breading
  1. Roll up the chicken, and dip into the melted butter, then the panko.
  2. Place in the greased baking dish.
  3. Tuck in the ends and secure each chicken bundle with toothpicks.
Bake
  1. Bake for 35-40 mins, or until a thermometer reads 165°F.
  2. Remove from the oven and let stand for 5 minutes.
Serve
  1. To serve, either place one chicken cordon bleu on each plate, or cut into slices.
  2. Devour.
OPTIONAL - Creamy Dijon Sauce
  1. In a small saucepan over medium heat, warm the heavy cream until it’s hot but not boiling.
  2. Whisk in the Dijon mustard until it’s fully incorporated.
  3. Stir in the grated parmesan and continue to whisk until the cheese is melted and the sauce is smooth.
  4. Add salt, black pepper, and garlic or onion powder (if using) to taste. For a richer flavor, you can also whisk in a tablespoon of unsalted butter until melted.

Notes

  • Use an egg wash or dijon mustard instead of butter if you prefer.
  • Change out the seasoning for Italian seasoning, or Tuscan Seasoning and leave out the thyme & garlic.
  • This can be made in an air fryer -just bake at 370°F for 20-25 minutes until an internal temperature of 165°F is reached.
