												Easy Chicken Lettuce Wraps with Peanut Sauce

																							Ingredients
- 1/4 cup peanut butter
 - 1 tbsp sesame oil
 - 1 tbsp water
 - 2 tbsp honey
 - 2 tbsp soy sauce
 - 1 tbsp olive oil
 - 1 tbsp hot pepper chopped (optional)
 - 1/4 cup green onions chopped
 - 1 tbsp ginger minced
 - 1 tbsp garlic minced
 - 1 1/2 cups ground chicken
 - 1 cup Jicama chopped
 - 1 cup brown rice cooked
 - 6-8 lettuce leaves washed
 - 1 cup cucumbers chopped into semicircles
 - 1/2 cup parsley chopped
 - 1 lime if desired
 
Instructions
- In a small bowl, add peanut butter, sesame oil, water, honey, and soy sauce. Whisk together and set aside.
 - Pour the olive oil into a large skillet and fry the white end of the green onion, ginger, and garlic (to make it spicy also add hot pepper) on a medium heat setting. After 1 minute, add the ground chicken.
 - After 3-4 minutes of cooking on medium-high heat, add the mixed peanut sauce ingredients from earlier. Turn off the heat. Add the Jicama and the green end of the onion.
 - Scoop the chicken mixture and rice onto lettuce leaves.
 - Add chopped cucumber and parsley. Squeeze some key lime juice on top. Serve and enjoy!
