Ingredients
- 2 tablespoons olive oil
- 3 cloves garlic minced
- 1 cup diced onion approx. 1 small onion
- 1 green bell pepper diced
- 3 boneless skinless chicken breasts cut into bite sized pieces
- 14 ounces crushed tomatoes
- 1 ½ cups chicken broth
- 1 cup frozen corn kernels
- 15 ounces canned black beans drained and rinsed
- 1 ounce taco seasoning or 3 tablespoons homemade
- salt to taste
Instructions
- Heat olive oil in a large dutch oven or heavy-bottomed pot over medium-high heat.
- Add garlic, onions, and bell peppers, and cook for 3-4 minutes or until the onions are translucent and soft.
- Add chicken, crushed tomatoes, chicken broth, frozen corn, black beans, and taco seasoning.
- Bring the mixture to a boil, then reduce the heat to medium-low and let the soup simmer for 15 minutes or until the chicken is cooked through.
- Taste the soup and season with salt if desired.
