Ingredients

  • 2 lb chicken see notes, boneless
  • 1 tablespoon ginger
  • 1 tablespoon garlic
  • 2 tablespoon neutral cooking oil generic cooking oil
  • 1 lemon
  • 1 tablespoon vinegar
  • 4 drops red food coloring (see notes)
Chicken Tikka Spice Blend
  • 1 teaspoon salt
  • 1 teaspoon cumin powder
  • 1 teaspoon coriander powder
  • 1 teaspoon red chili powder
  • 1 teaspoon kashmiri chili powder
  • 1 teaspoon amchur powder
  • ¼ teaspoon turmeric powder

Instructions

  1. Cut the chicken into 1.5-inch cubes.
  2. Mix all of the ingredients in a bowl and toss to coat the chicken.
  3. Marinate the chicken for a minimum of 30 minutes (see notes)
  4. Once the chicken is ready to cook, thread it on skewers.
  5. Preheat your grill to 500 degrees F.
  6. Place the skewers on the grill and sear for 5 minutes on each side.
  7. Reduce the grill to 350 degrees F, and cook the chicken till it reaches an internal temperature of 165 degrees F.

Notes

  • Use chicken tenderloins or boneless thighs for more tender and juicy results; chicken breast may dry out.
  • Red food coloring is optional and used only to achieve the traditional bright red color of chicken tikka without changing flavor.
  • Marinate the chicken for at least 30 minutes, but longer times or overnight marination deepen flavor and tenderness.
  • Marinated chicken can be frozen and cooked from frozen when needed.
  • Thread chicken evenly on skewers for consistent grilling and heat exposure.
