  • 1 tablespoon ginger
  • 1 tablespoon garlic
  • 2 tablespoon neutral cooking oil generic cooking oil
  • 1 lemon
  • 1 tablespoon vinegar
  • 4 drops red food coloring (see notes)

Chicken Tikka Spice Blend

  • 1 teaspoon salt
  • 1 teaspoon cumin powder
  • 1 teaspoon coriander powder
  • 1 teaspoon red chili powder
  • 1 teaspoon kashmiri chili powder
  • 1 teaspoon amchur powder
  • ¼ teaspoon turmeric powder

Instructions

  1. Cut the chicken into 1.5-inch cubes.
  2. Mix all of the ingredients in a bowl and toss to coat the chicken.
  3. Marinate the chicken for a minimum of 30 minutes (see notes)
  4. Once the chicken is ready to cook, thread it on skewers.
  5. Preheat your grill to 500 degrees F.
  6. Place the skewers on the grill and sear for 5 minutes on each side.
  7. Reduce the grill to 350 degrees F, and cook the chicken till it reaches an internal temperature of 165 degrees F.

  • Use chicken tenderloins or boneless thighs for more tender and juicy results; chicken breast may dry out.
