Ingredients
- 1 1/2 pounds ground beef
- 1 onion chopped
- 1 chili seasoning packet 1 ounce
- 2 cloves garlic minced
- 1 can crushed tomatoes 28 ounces
- 1 1/2 cups frozen corn
- 1 can black beans 15 ounces, drained
- 1 box cornbread mix 11.5 ounces, like Jiffy
- 1 egg
- 1/3 cup milk or the amount on your cornbread box
Instructions
- Preheat oven to 375° and lightly spray a 9x13 baking dish with cooking spray and set aside.
- Brown the ground beef with the onion in a skillet on medium heat. Cook until the meat is cooked, has some color, and the onions are soft.
- Add in the garlic and the chili seasoning packet. Cook until the garlic is fragrant, about 30 seconds.
- Stir in the crushed tomatoes and the corn. Let it simmer for 5 minutes.
- Remove from heat and add in the black beans.
- Mix the cornbread with the egg and milk in a large bowl as directed on the back of the box.
- Add the chili mixture to the baking dish and spread around. Then, put the cornbread batter on top and spread it to cover the chili.
- Bake in the preheated oven for 25 minutes or until golden brown. Scoop and serve.

- Serve topped with sour cream, green onions, ja, jalapenos, or other favorite chili toppings.
- This recipe works great with ground turkey or ground chicken.
- Add jalapenos or cayenne pepper if you want it spicier. Or choose a mild chili seasoning packet for less spice.
- Add extra veggies to your chili if you like, such as diced bell peppers, zucchini, or carrots.
