Easy Chili Cornbread Casserole Is a Weeknight Dinner Hero

Ingredients

  • 1 1/2 pounds ground beef
  • 1 onion chopped
  • 1 chili seasoning packet 1 ounce
  • 2 cloves garlic minced
  • 1 can crushed tomatoes 28 ounces
  • 1 1/2 cups frozen corn
  • 1 can black beans 15 ounces, drained
  • 1 box cornbread mix 11.5 ounces, like Jiffy
  • 1 egg
  • 1/3 cup milk or the amount on your cornbread box

Instructions

  1. Preheat oven to 375° and lightly spray a 9x13 baking dish with cooking spray and set aside.
  2. Brown the ground beef with the onion in a skillet on medium heat. Cook until the meat is cooked, has some color, and the onions are soft.
  3. Add in the garlic and the chili seasoning packet. Cook until the garlic is fragrant, about 30 seconds.
  4. Stir in the crushed tomatoes and the corn. Let it simmer for 5 minutes.
  5. Remove from heat and add in the black beans.
  6. Mix the cornbread with the egg and milk in a large bowl as directed on the back of the box.
  7. Add the chili mixture to the baking dish and spread around. Then, put the cornbread batter on top and spread it to cover the chili.
  8. Bake in the preheated oven for 25 minutes or until golden brown. Scoop and serve.

Notes

  • Serve topped with sour cream, green onions, ja, jalapenos, or other favorite chili toppings.
  • This recipe works great with ground turkey or ground chicken.
  • Add jalapenos or cayenne pepper if you want it spicier. Or choose a mild chili seasoning packet for less spice.
  • Add extra veggies to your chili if you like, such as diced bell peppers, zucchini, or carrots.
  • Serve topped with sour cream, green onions, ja, jalapenos, or other favorite chili toppings.
