Easy Chocolate Chip Banana Bread

This Easy Chocolate Chip Banana Bread combines mashed ripe bananas with butter, sugar, and eggs to create a moist batter enriched with Greek yogurt and vanilla. The addition of chocolate chips adds sweetness and texture throughout the tender crumb. Baking in a loaf pan produces a classic dense but soft bread, ideal for breakfast or snack time with milk or tea.

Ingredients

  • 1 butter ½ cup, stick
  • 1 ½ cups white cane sugar
  • 3 banana ~ 1 ½ cups, mashed
  • 2 egg
  • ¼ cup Greek yogurt
  • 1 tsp vanilla extract
  • 2 cups all-purpose flour
  • ½ cup chocolate chips and/or pecans
  • 2 teaspoons baking powder
  • 1 tsp baking soda
  • Pinch ground cinnamon
  • Pinch salt

Instructions

  1. Preheat the oven to 350°F and grease (1) 9 x 5 loaf pan (or (2) 8 x 4 loaf pans).
  2. Beat sugar and room temperature butter together until combined.
  3. Add eggs, mashed bananas, butter, greek yogurt, and vanilla in the mixing bowl. Beat together until fluffy.
  4. Pour in all dry ingredients (flour, baking soda & powder, pinch of salt, ground cinnamon) besides the chocolate chips into the bowl and mix together.
  5. Once the batter is consistent, fold in chocolate chips.
  6. Pour batter into greased 8 x 4 loaf pan - top with more chocolate chips if desired.
  7. Bake for 50 minutes or slightly under until toothpick comes out clean. Note: cooking time will vary if baking (2) 8x4 loaf pans. Use the toothpick method to determine doneness.
  8. Let cool slightly before slicing. Serve warm with your favorite cup of tea/milk/coffee or just inhale by the slice.

Notes

  • To make muffins, divide batter into muffin tins and bake 25-30 minutes until a toothpick shows only a few moist crumbs.
  • Store banana bread at room temperature or refrigerated for up to 4 days to maintain freshness.
  • Freeze banana bread for up to 3 months; thaw before serving.
