Easy Chocolate Chip Banana Bread
Description
Easy Chocolate Chip Banana Bread relies on ripe mashed bananas and creamed butter and sugar to provide moisture and sweetness. Eggs and Greek yogurt add richness and tenderness, while vanilla extract enhances aroma. The dry ingredients include all-purpose flour, baking powder, baking soda, cinnamon, and salt, which leaven and season the bread evenly. Chocolate chips are folded in last to disperse bursts of chocolate throughout the loaf.
After mixing, the batter is poured into greased loaf pans and baked until a toothpick comes out clean, yielding a golden crust and moist interior. The bread slices well and holds its shape.
Serve the banana bread warm or at room temperature with tea, coffee, or milk. It can be made into muffins by adjusting baking time. Store leftovers on the counter or refrigerated for up to four days, or freeze for longer storage.
Ingredients
- 1 butter ½ cup, stick
- 1 ½ cups white cane sugar
- 3 banana ~ 1 ½ cups, mashed
- 2 egg
- ¼ cup Greek yogurt
- 1 tsp vanilla extract
- 2 cups all-purpose flour
- ½ cup chocolate chips and/or pecans
- 2 teaspoons baking powder
- 1 tsp baking soda
- Pinch ground cinnamon
- Pinch salt
Instructions
- Preheat the oven to 350°F and grease (1) 9 x 5 loaf pan (or (2) 8 x 4 loaf pans).
- Beat sugar and room temperature butter together until combined.
- Add eggs, mashed bananas, butter, greek yogurt, and vanilla in the mixing bowl. Beat together until fluffy.
- Pour in all dry ingredients (flour, baking soda & powder, pinch of salt, ground cinnamon) besides the chocolate chips into the bowl and mix together.
- Once the batter is consistent, fold in chocolate chips.
- Pour batter into greased 8 x 4 loaf pan - top with more chocolate chips if desired.
- Bake for 50 minutes or slightly under until toothpick comes out clean. Note: cooking time will vary if baking (2) 8x4 loaf pans. Use the toothpick method to determine doneness.
- Let cool slightly before slicing. Serve warm with your favorite cup of tea/milk/coffee or just inhale by the slice.
Notes
- To make muffins, divide batter into muffin tins and bake 25-30 minutes until a toothpick shows only a few moist crumbs.
- Store banana bread at room temperature or refrigerated for up to 4 days to maintain freshness.
- Freeze banana bread for up to 3 months; thaw before serving.
