Instructions
- Chop the chocolates finely with a sharp knife. Place them in a heat-proof mixing bowl. Heat the cream in a small saucepan until it just boils. Pour the cream into the bowl with chocolate. With a wire whisk, slowly stir the cream and chocolates together until the chocolate is completely melted. Whisk in the liqueur of preference and vanilla. Refrigerate until completely firm enough to roll, about 2 to 3 hours. Place your coating(s) on a plate; set aside.
How to Shape Homemade Chocolate Truffles
- Remove the chilled truffle mixture from the refrigerator ( If you've had the chocolate mixture in the fridge for longer than 3 hours, you may need to let it sit out at room temperature for 10 to 15 minutes, so it's malleable enough to work with.)
- With 2 teaspoons, spoon round balls of the chocolate mixture onto a baking sheet lined with parchment paper. Refrigerate the Homemade Chocolate truffles for 30 minutes until firm. Roll each dollop of chocolate in your hands to roughly make a round ball. Roll in the desired coating. These will keep in an airtight container refrigerated for up to 2 weeks but serve at room temperature.

Notes
- How to Store & Re-Heat
- Store the truffles in an airtight container in the refrigerator for up to 2 weeks. Ensure to keep them away from strong-smelling foods that could affect their flavor.
- Make-Ahead
- Prepare the truffle mixture and form the balls as usual, then place the truffles on a parchment-lined baking sheet and refrigerate them for at least 30 minutes or until firm. Once the truffles are firm, transfer them to an airtight container and store them in the refrigerator for up to 2 weeks or in the freezer for up to 2 months.
- When you're ready to serve the truffles, remove them from the fridge or freezer and allow them to come to room temperature before serving. If the truffles have been frozen, you may need to re-coat them with cocoa powder or other coatings before serving to ensure they are evenly coated.
- How to Freeze
- Prepare the Chocolate Truffles as directed in the recipe. Allow the truffles to cool, then place them on a baking sheet lined with parchment paper. Place the baking sheet in the freezer and freeze the truffles for about 1-2 hours or until they are firm. Once the truffles are healthy, transfer them to a freezer-safe container or a freezer bag.
- Be sure to label the container or bag with the date and the type of truffle. Seal the container or bag tightly, removing as much air as possible to prevent freezer burn. Place the container or bag in the freezer and store the truffles for up to 2 months. When you're ready to serve the truffles, remove them from the freezer and let them thaw in the refrigerator for a few hours or overnight. Once the truffles are melted, they may need to be re-coated with cocoa powder or other coatings before serving to ensure they are evenly coated.
