Easy Cilantro Chimichurri Recipe

Ingredients

  • 2 cups fresh cilantro
  • 2 tablespoons red wine vinegar
  • 3 cloves garlic peeled
  • 1/2 small red onion peeled and cut into chunks
  • 2 teaspoons dried oregano
  • 2 teaspoons red pepper flakes
  • 1 cup olive oil divided
  • salt and pepper to taste

Instructions

  1. To a blender or food processor, add the cilantro, vinegar, garlic, onion, oregano, red pepper flakes, and 1/2 of the olive oil.
  2. Pulse to mince and combine the ingredients.
  3. Add the rest of the olive oil and gently stir to combine.
  4. Transfer the sauce to a mason jar and set it aside at room temperature for 20 minutes to let the flavors meld.
  5. Serve, and enjoy!
