Ingredients

  • 1 box of Cinnamon Streusel Muffin Mix  we used Betty Crocker
  • ingredients as per box instructions  (usually water, oil, and eggs) *Substitute whole milk for water for extra moist muffins
  • ½ cup butterscotch chips
  • 1 tsp vanilla extract
  • ½ cup ground nutmeg
  • ¼ cup Chopped pecans or walnuts optional
  • 2 tbsp melted butter
  • 1 tbsp brown sugar

Instructions

  1. Preheat your oven according to the box instructions. Line your muffin tin with paper liners or lightly grease them. (400 degrees F for nonstick pan).
  2. Prepare the muffin batter as directed on the box, adding vanilla extract and ground nutmeg.
  3. Fold in butterscotch chips and nuts (if using).
  4. Divide the batter among muffin cups, filling each about two-thirds full.
  5. Mix the streusel topping with melted butter and brown sugar, then sprinkle over muffins.
  6. Bake as directed (about 15-20 minutes), until a toothpick comes out clean.
