Ingredients
- 1 box of Cinnamon Streusel Muffin Mix we used Betty Crocker
- ingredients as per box instructions (usually water, oil, and eggs) *Substitute whole milk for water for extra moist muffins
- ½ cup butterscotch chips
- 1 tsp vanilla extract
- ½ cup ground nutmeg
- ¼ cup Chopped pecans or walnuts optional
- 2 tbsp melted butter
- 1 tbsp brown sugar
Instructions
- Preheat your oven according to the box instructions. Line your muffin tin with paper liners or lightly grease them. (400 degrees F for nonstick pan).
- Prepare the muffin batter as directed on the box, adding vanilla extract and ground nutmeg.
- Fold in butterscotch chips and nuts (if using).
- Divide the batter among muffin cups, filling each about two-thirds full.
- Mix the streusel topping with melted butter and brown sugar, then sprinkle over muffins.
- Bake as directed (about 15-20 minutes), until a toothpick comes out clean.
