Crust:

  • 125 g (1 cup) all-purpose flour
  • ½ cup unsalted butter
  • ½ cup light brown sugar
  • ¼ teaspoon kosher salt
  • 1 teaspoon coconut extract

Filling:

  • cup light brown sugar
  • ¼ cup all-purpose flour
  • ¼ teaspoon kosher salt
  • 2 large eggs
  • 2 teaspoons pure vanilla extract
  • 1 teaspoon coconut extract
  • 1 tablespoon fresh lemon or lime juice
  • 1 cup pineapple tidbits in 100% juice drained
  • 1 cup shredded sweetened coconut

Topping:

  • 1 cup shredded sweetened coconut

Instructions

  1. Preheat the oven to 350°F (180°C). Grease a 9-inch square pan or line it with parchment paper. In a medium bowl, combine the crust ingredients and mix until well combined. Press the mixture into the bottom of the prepared pan to form an even layer. Bake the crust for 12-15 minutes or until it is lightly golden brown. Remove from the oven and let it cool for 10 minutes.
  2. Meanwhile, prepare the filling. In a separate medium bowl, combine the eggs, vanilla extract, coconut extract, and lemon juice. Whisk until well combined.
  3. Add the drained pineapple tidbits and shredded sweetened coconut to the egg mixture. Mix until everything is coated.
  4. In another medium bowl, combine the light brown sugar, all-purpose flour, and kosher salt. Add the dry ingredients to the wet ingredients and mix well. Pour the filling mixture over the crust, spreading it out evenly. Sprinkle the top with the remaining shredded sweetened coconut.
