Ingredients
- 1 tablespoon olive oil
- 2 cups sweet corn
- 4 cloves garlic minced
- 1 medium tomato seeded and diced
- ¼ medium red onion finely chopped
- 2 tablespoons lime juice
- 1 avocado diced
- ⅓ cup fresh cilantro chopped
- ½ Jalapeño finely chopped optional
- Tortilla chips for dipping
Instructions
- In a pan, saute the corn and garlic in olive oil on med-high for about 5-10 minutes. Set aside and cool to room temperature.
- In a medium bowl, combine all the remaining ingredients and mix well.
- Add the cooked corn and garlic (once cooled) and mix thoroughly again.
- Serve with tortilla chips.

Notes
- If using whole tomatoes, I like to remove the seeds to the salsa is less watery.
- Thaw frozen corn and drain any excess liquid before sautéing.
- You can grill the corn instead of sautéing if you'd like. It's really good!
- Bell Peppers: Add diced bell peppers for an extra crunch and a pop of color.
- Black Beans: Add black beans for added protein and fiber.
- Cheese: Sprinkle in some cotija or feta cheese.
- Mango: For a sweeter version, add diced mango.
- Cucumber: seeded diced cucumber gives a refreshing crunch
- Spicy kick: add diced jalapeño pepper or a dash of chili powder.
