Easy Creamed Corn

Easy Creamed Corn combines frozen corn with a smooth, creamy sauce made from butter, flour, and half-and-half. The addition of garlic powder and a pinch of cayenne pepper gives the dish a subtle warmth and depth. The corn is cooked gently until plump and tender, and the sauce reduces to a creamy consistency. Ingredients

  • 2 tablespoons butter
  • 1 tablespoon flour
  • 2 cups half-and-half
  • 1/4 teaspoon garlic powder
  • Pinch cayenne pepper
  • 5 cups corn frozen
  • salt to taste
  • black pepper to taste

Instructions

  1. Melt the butter in a pot over medium-high heat. Add the flour and cook it for a minute or so, stirring nearly constantly. 
  2. Whisk in the half-and-half, garlic powder, and cayenne pepper. Make sure that there's no lumps.
  3. Stir in the corn. After about 10 minutes, it should start to bubble. Once it's bubbling, turn the heat down so it's simmering gently.  
  4. Cook the corn for another 15-20 minutes or until the sauce has reduced and the corn is nice and plump. Keep an eye on it, and stir it occasionally.
  5. Add salt & pepper as needed (I'm pretty generous with the salt). 

Notes

  • A 750g (26.5 oz) bag of frozen corn equals approximately 5 cups and is recommended for this recipe.
  • If you use less corn, slightly reduce the amount of half-and-half to maintain the sauce's consistency.
  • Stir the mixture occasionally during cooking to prevent sticking and ensure even heat distribution.
