Easy Creamy Mushroom Risotto

This Easy Creamy Mushroom Risotto, cooked with arborio rice is flavored with garlic, parmesan and a delicious blend of parsley and thyme.

Ingredients
- 2 tablespoon butter
- 2 tablespoon extra virgin olive oil
- 1 teaspoon minced garlic
- 2 shallots (SEE NOTES)
- 1 cup button mushrooms
- 1 cup arborio rice
- 4 cups broth
- ½ cup white wine vinegar (SEE NOTES)
- ½ cup Parmesan Cheese
- ¼ cup Italian parsley
- ¼ cup thyme

Instructions
- Heat 2 tablespoons of olive oil
- Saute the minced garlic, chopped shallots and chopped mushrooms in the oil till they are just slightly wilted and then set aside.
- In a separate saucepan, heat your broth and white wine vinegar till it is very hot.
- Heat the 2 tablespoons of butter and toast the arborio rice in it till it turns translucent.
- Add the white wine vinegar at this point
- Add the broth slowly, 1 cup full at a time, and cook on medium high till the liquid evaporates.
- Add the soffritto (sauteed vegetables), ¼ cup parmesan and a little more butter if desired to the cooked rice and concentrated liquid.
- Stir to make the risotto creamy.
- Let the mixture sit for 2 minutes as this makes it creamier.
- Garnish with the remaining ¼ cup parmesan, parsley and thyme and serve.
Notes
- Shallots - I personally like the mild, sweet taste of shallots in this recipe. However, if for some reason you don't have any available, you can substitute ¼ yellow onion for the 2 shallots. Sweet onions will be too sweet and white or red onions too sharp for this recipe.
- White Wine Vinegar - Risotto can easily be made without wine or this vinegar. The only reason for adding in either is for additional flavor. The acidity helps balance some of the richness in the other ingredients. If you want to avoid calories or alcohol use white wine vinegar as listed in this recipe. If you want to go with the real ingredient then use 1 cup of white wine in place of the ½ cup vinegar.
