Easy Creme Egg Brownies

Easy chocolate brownies filled with mini Creme Eggs and topped with halved Creme Eggs for a delicious Easter treat.

Ingredients

  • 200 g 70% cocoa dark chocolate
  • 180 g butter
  • 250 g caster sugar
  • 3 medium eggs
  • 1 Teaspoon vanilla extract
  • 100 g plain flour
  • 1 Tablespoon cocoa powder
  • 80 g milk chocolate chips
  • 156 g Mini Creme Eggs (2 bags)
Topping
  • 6 Creme Eggs, halved/chopped

Instructions

  1. Preheat your oven to 160°C (140°C for fan ovens) and line an 8x8 inch tin with baking paper.
  2. Melt the dark chocolate and the butter together over low heat on the stove then set aside to cool for 10 minutes.
  3. To a large bowl, add the sugar, eggs and vanilla extract. Using an electric whisk, whisk it all together for a few minutes until it becomes pale and voluminous.
  4. Pour the melted chocolate mixture into the bowl and fold it into the egg/sugar mixture.
  5. Add the flour and the cocoa powder and mix gently until well combined. Then stir in the chocolate chips and mini Creme Eggs.
  6. Transfer the mixture to your lined tin then top with the Creme Egg pieces.
  7. Bake for around 35-40 minutes until the brownies have risen and are pulling away from the tin slightly.
  8. Leave in the tin until cool then transfer to the fridge overnight to set. Once set, cut your brownie into squares and enjoy!

Notes

  • Store in the fridge in an airtight container for up to 1 week.
