Easy Crockpot BBQ Chicken Sliders Recipe

Ingredients

  • 1 lb chicken breast *boneless/skinless
  • 20 oz BBQ sauce
  • 1 tablespoon unsalted butter
  • 1 package hawaiian rolls 12 count
Coleslaw
  • 1/2 cup purple coleslaw shredded
  • 1/2 cup green cabbage shredded
  • 1/2 cup carrots shredded
  • 1 teaspoon salt
  • 1 teaspoon pepper
  • 1 teaspoon paprika
  • 1/3 cup sour cream
  • 1/2 tablespoon lemon juice
  • 1 cup mayonnaise

Instructions

  1. Place chicken in crock pot and cover with BBQ sauce. Place lid on crock-pot and cook low for 6-7 hours, or high for about 3-4 hours.
  2. Using two forks or a meat shredder, shred chicken and stir to fully coat chicken in sauce.
  3. In a separate large mixing bowl, add the green cabbage, purple cabbage, carrots, salt, pepper, paprika, sour cream, lemon juice, and mayonnaise. Mix until well combined.
  4. Slice Hawaiian rolls in half and place bottom half into a greased 9x13 inch baking pan.
  5. Spread the chicken in an even layer on the rolls, then top with the slaw. Place the top buns on top.
  6. Melt butter in a small microwave-safe bowl and spread it on the top buns.
  7. Bake uncovered for 13 to 15 minutes in a preheated oven, 350 degrees until the buns are golden brown and the sliders are heated through.
  8. Serve and enjoy!
