Easy Crockpot Salsa Chicken
Easy Crockpot Salsa Chicken combines boneless, skinless chicken breasts cooked slowly with salsa and optional taco or fajita seasoning for a tender and flavorful shredded chicken. The slow cooking infuses the chicken with savory and mildly spiced salsa flavor, while the option to reduce the salsa enhances the sauce's thickness. This versatile recipe suits family dinners or meal prep and pairs well with tortillas, rice, or salads.
Ingredients
- 1 pound chicken breast boneless, skinless, 450g
- 2 Cups salsa
- 1 tablespoon taco seasoning optional, or fajita seasoning
Instructions
- Place chicken breasts in a crockpot.
- Top with fajita seasoning or taco seasoning if using, followed by the salsa.
- Cover and cook on high for 4 hours.
- Take chicken out and shred. Reduce salsa if you wish.
- Return chicken to crockpot and stir everything together.
Notes
- Cook less time if a sliceable chicken texture is preferred instead of shredded.
- Shred chicken efficiently by placing it in a bowl and using a hand or stand mixer with a paddle attachment.
- Adjust salsa quantity to control sauce thickness; remove excess liquid before mixing shredded chicken.
- Check internal temperature to ensure chicken is fully cooked to 165°F / 74°C for safety.
- Prefer smooth, blended salsa for a consistent sauce texture.
- Add extra salsa when reheating to maintain moisture and prevent dryness.
- Check seasoning ingredients for dietary restrictions like Keto, Paleo, or Whole30 if applicable.
- Store leftovers in airtight containers in the refrigerator for up to 3-4 days.
